Musubin’ has your next onigiri and matcha fix covered

🍴 From fine-dining experiences to sushi burritos and push-pop sushi, the Japanese staple has embraced a more casual, fast-food-inspired identity in recent years. NYC-born Musubin’ is one sushi truck that leans into that shift with grab-and-go onigiri and fresh matcha brews, making for a distinctly satisfying taste of Japanese cuisine.

A short-and-sweet soft-opening menu: Tucked into one corner of New Cairo’s sprawling The Driive, Musubin’ doesn’t take up too much space with just three tables flanking its counter. If you’re lucky, you’ll snag a seat; if not, their offerings are designed more for grab-and-go convenience than a lengthy sit-down meal. Still, we managed to grab a table and, after scanning the sushi-inspired onigiri lineup and spotting a teaser for a full menu reveal soon, settled on the truffle salmon, spicy kani, smoked salmon, and spicy shrimp tempura onigiris. To round off the Japanese affair, we paired them with the mango golden hour and the lavender matcha.

What we liked: Our orders were served in no time — and devoured just as quickly. The portable rice balls delivered a vibrant flavor profile that had our taste buds engaged from start to finish. Every ingredient came through clearly and tasted fresh. The spicy shrimp tempura onigiri was a standout, from the fried shrimp and caviar to the cream cheese and spicy mayo. The smoked salmon offered a perfectly smoky bite, and the spicy kani was similarly flavor-packed. The truffle salmon also stood out with its generous truffle sauce, though the flavor may have threatened to overpower the rest of the onigiri.

The matchas held their own, too. The mango golden hour matcha made for a refreshing sip. The green tea was an ideal creamy consistency with subtle, bittersweet matcha notes. While we may be partial to the mango-matcha combination, some may find the mango slightly overpowering. The lavender matcha delivered a cleaner, grassier matcha profile, but didn’t stand out too much as an overall blend. That said, the matchas were a great sweet addition to our gratifying onigiri bites, and we’d come back to give the other matcha blends a go.

The verdict: Musubin’ is a must-try for Japanese cuisine enthusiasts — if not for the matcha, then certainly for the onigiri. The pairing makes for more of a snack or in-between meal than a full-on lunch or dinner — but there’s something refreshing about having refined, flavorful bites in a grab-and-go format. With a larger menu on the horizon, the onigiri truck is definitely one we’ll be keeping a close eye on — and one we’d gladly revisit if we’re ever craving sushi-inspired flavors without committing to the price tag and formality of a traditional sushi outing.
