We\u2019d know, we\u2019ve pretty much <a target=\"_blank\" href=\"https:\/\/enterpriseam.com\/egypt\/?s=sushi\" style=\"\">tried them all<\/a>, with some faring better than others. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>That\u2019s exactly the problem one premier Egyptian F&B entrepreneur has been working to fix. <\/strong>Tamer Leithy (<a target=\"_blank\" href=\"https:\/\/www.linkedin.com\/in\/tamer-leithy-4a828a7a\/\" style=\"\">LinkedIn<\/a>), who brought some of Egypt\u2019s biggest F&B names to life, including Tamara, Mori, Mince, Ted\u2019s, and The Grocer\u2019s, introduced his experimental Japanese restaurant: Hara Hachi Bu. EnterpriseAM sat down with Leithy to ask: Why go against the grain? Why now? Did it pay off?<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>\u201cI realized a gap in the market for high-quality sushi. I noticed that around 95% of the market is working with frozen ingredients<\/strong>,\u201d Leithy tells EnterpriseAM. \u201cIt\u2019s all about offers, [markdowns], and \u2018all-you-can-eat\u2019 options \u2014 which limits a restaurant\u2019s ability to provide high-quality sushi, which is the whole idea.\u201d For that model to be sustainable, restaurants need to compromise: either hike the prices to cosmic levels or risk quality. \u201cYou can\u2019t have both,\u201d Leithy says.<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>But was it always like this? Not quite. <\/strong>Sushi was first introduced in Egypt in the late \u201880s, courtesy of Japanese expats who brought professional chefs to help popularize their country\u2019s national cuisine, according to <a target=\"_blank\" href=\"https:\/\/english.ahram.org.eg\/NewsContent\/7\/49\/22089\/Life--Style\/Food\/Egypts-sushi-obsession-History-and-health-implicat.aspx\" style=\"\">Al Ahram<\/a>, citing Egyptian sushi chef Ahmed Kamal. In 1995, according to Kamal, a single roll could cost EGP 10 \u2014 quite the number back then. Until that point, sushi was confined to high-end restaurants in upper-class neighborhoods. It has skyrocketed in popularity over the past two decades. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>\u201cIt wasn\u2019t always this way \u2014 this shift [toward offers] happened sometime over the last six to seven years, but the market unfortunately shifted<\/strong>,\u201d Leithy tells us. As the top players began their pivot, everyone else followed suit, and everyone just got used to it. \u201cThat form of consuming sushi has become a way of life for Gen Z. As they grew up, they got used to that. So now you have a gap for really good, fresh sushi, where all the ingredients are fresh.\u201d Leithy then notes that all the existing sushi brands have \u2014 more or less \u2014 \u201cthe exact same menu,\u201d saying he wanted to do something entirely different.<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/ent.news\/2026\/6\/393.jpg?ssl=1\"\/><\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>That\u2019s exactly what Leithy did with <\/strong><strong><a target=\"_blank\" href=\"https:\/\/www.instagram.com\/harahachibu.eg\/?hl=en\" style=\"\">Hara Hachi Bu<\/a><\/strong><strong>.<\/strong> A Japanese Confucian proverb that translates to \u201ceat until you are 80 percent full,\u201d the concept \u2014 with its debut location in District 5 \u2014 sought to bring back a (literally) fresh, mindful approach to the Japanese delicacy. Through different recipes, new introductions to the menu, and a strictly fresh approach, Leithy brought back what it truly means to enjoy sushi.<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Egyptians love a good bargain \u2014 exactly what traditional sushi spots serve up \u2014 but we love good, fresh food even more.<\/strong> \u201cOur entire approach to marketing the restaurant was based on the fact that we were all about freshness, and while the Hara Hachi Bu concept was a part of it, to us it was always about offering something literally fresh.\u201d Leithy\u2019s mission to offer a fine-dining sushi experience in a casual setting paid off. \u201cWe had high expectations, but reactions went even beyond that.\u201d Guest reactions were overwhelmingly positive, Leithy tells us, with patrons \u2014 including us, when we stopped by for an <a target=\"_blank\" href=\"https:\/\/enterpriseam.com\/egypt\/2025\/05\/09\/japanese-cuisine-with-a-fresh-concept\/\" style=\"\"><\/a><a target=\"_blank\" href=\"https:\/\/enterpriseam.com\/egypt\/2025\/05\/09\/japanese-cuisine-with-a-fresh-concept\/\" style=\"\">unplanned<\/a><a target=\"_blank\" href=\"https:\/\/enterpriseam.com\/egypt\/2025\/05\/09\/japanese-cuisine-with-a-fresh-concept\/\" style=\"\">review<\/a> in May of last year \u2014 praising the freshness.<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Hara Hachi Bu\u2019s strictly fresh approach comes with risks \u2014 especially amid regional tensions.<\/strong> \u201cWe get our salmon flown in by plane multiple times a week \u2014 and most of our ingredients are sourced from abroad as well,\u201d Leithy says. With the ongoing tensions, Hara Hachi Bu found itself in a bit of a pickle: \u201cWhen it came to fish, we found ourselves almost completely out of fresh stock. We didn\u2019t know what to do because we couldn't serve frozen salmon, and if we were going to serve it, we would have had to declare it to the customers.\u201d By some miracle, before having to make that decision, a shipment came through, and business carried on as usual. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>With 12 tables over approximately 60 sqm, the District 5 branch functioned as a stepping stone for Leithy<\/strong> \u2014 a way to build the name and reputation. A little over a year later, Leithy took his experimental concept to the west of the capital with a brand-new branch at <a target=\"_blank\" href=\"https:\/\/www.instagram.com\/p\/DYCtI9TIWgM\/?hl=en\" style=\"\">Hale Town Mall<\/a> in Sixth of October. \u201cMy friends, family, business partners, and I always felt that West Cairo was missing a prime sushi destination \u2014 but I just couldn\u2019t find the right location. The second I did, we opened up.\u201d <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Looking forward, Leithy has his sights set on expanding the nascent concept.<\/strong> \u201cThe new location is highly accessible to everyone \u2014 between New Giza and Palm Hills, you have over 12k homes, and we see very strong potential there, especially on the delivery front.\u201d<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>The takeaway for up-and-coming F&B entrepreneurs:<\/strong> When a good chunk of the market converges on the same offerings and pricing model, the biggest risk isn\u2019t trying something new, it\u2019s sticking to the old, what everyone else is doing.
