Today, the word Sahel elicits thoughts of azure beaches, unparalleled nightlife experiences \u2026 and culinary perfection. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>The summer-long \u201cSahel season\u201d sees <\/strong><strong>mns<\/strong><strong> of tourists, most of them Egyptian, with an <\/strong><strong>increasing number of regional and international visitors.<\/strong> Demand is sky high, but it\u2019s not a year-round destination just yet. How do Sahel\u2019s F&amp;B players keep up, what is standing in their way, and what\u2019s missing?<\/p>\n<p class=\"tag-border-left\">HOT &amp; FRESH FOR THE SUMMER-<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>More tourists, bigger appetites. <\/strong>As the North Coast continues to <a target=\"_blank\" href=\"https:\/\/enterprise.news\/destination-sahel\/en\/news\/story\/de8abf46-947e-4b32-9b9d-2c765c1d0e07\/what-are-we-talking-about-when-we-talk-about-sahel%3F\" style=\"\" rel=\"noopener\">grow rapidly<\/a> and multi-bn USD developments rise, demand for F&amp;B services is growing as more people spend longer vacations on the Mediterranean. Ras Al Hekma alone has its eyes set on <a target=\"_blank\" href=\"https:\/\/enterprise.news\/destination-sahel\/en\/news\/story\/4206ff53-baaf-4859-b2b2-baa0f3c01f4a\/a-coast-under-the-influence\" style=\"\" rel=\"noopener\">8<\/a><a target=\"_blank\" href=\"https:\/\/enterprise.news\/destination-sahel\/en\/news\/story\/4206ff53-baaf-4859-b2b2-baa0f3c01f4a\/a-coast-under-the-influence\" style=\"\" rel=\"noopener\">mn tourists<\/a><a target=\"_blank\" href=\"https:\/\/enterprise.news\/destination-sahel\/en\/news\/story\/4206ff53-baaf-4859-b2b2-baa0f3c01f4a\/a-coast-under-the-influence\" style=\"\" rel=\"noopener\"><\/a> annually upon completion. That\u2019s going to make Sahel an opportunity for both established and rising F&amp;B players. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>The proof is in the pudding. <\/strong>Some of Cairo\u2019s most famous hot spots either started their journey in Sahel, or found their big break there. The earliest days of <strong><a target=\"_blank\" href=\"https:\/\/www.instagram.com\/graciaseg\/?hl=en\" style=\"\" rel=\"noopener\">TBS<\/a><\/strong> were on the shores of the Mediterranean. <strong><a target=\"_blank\" href=\"https:\/\/www.instagram.com\/pao.egy\/?hl=en\" style=\"\" rel=\"noopener\">P\u00e0o<\/a><\/strong> was a modest truck parked at The Drive by the Waterway before making the trip up north in the summer of 2023 \u2014 a move which would eventually see the boba hotspot take over the coast. Further proof? One look at Hacienda-born and now-viral burger chain <strong><a target=\"_blank\" href=\"https:\/\/www.instagram.com\/thebrgrtruck\/?hl=en\" style=\"\" rel=\"noopener\">BRGR<\/a><\/strong> should suffice, and Brown Nose Coffee (arguably the best cup of joe on the coast) got its start up here.<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Big names get bigger. <\/strong>Kiki\u2019s, The Lemon Tree &amp; Co, The Smokery, Sachi, and let us not forget the classic Sahel nightspot of yesteryear that started it all \u2014 the iconic <strong>Andrea<\/strong> \u2014 have only grown bigger season by season. But growing a food and beverage business in Sahel isn\u2019t an easy proposition.<\/p>\n<p class=\"tag-border-left\">MOVING PARTS- <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>When it comes to operations there\u2019s no easy way to do it. <\/strong>You\u2019ll either go the food truck route \u2014 the model with relatively lower risk \u2014 or you break the bank for a dine-in location. In both cases, you\u2019re going to face challenges. Both capital and aspirations come into play here. Nascent brands will likely opt for food trucks, because \u201cthey cost the least,\u201d says food consultant, architect, and chef <a target=\"_blank\" href=\"https:\/\/www.instagram.com\/archi_chefnesma?igsh=MWVncDM1Mm12eDhhbA%3D%3D\" style=\"\" rel=\"noopener\">Nesma Mohamed<\/a>, a Sahel veteran who has brought to life coastal brands including burger hotspot <a target=\"_blank\" href=\"https:\/\/www.instagram.com\/101b___\/\" style=\"\" rel=\"noopener\">101B<\/a>. This year, she\u2019s bringing RVRS to life.<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Things can get ugly pretty quickly: \u201c<\/strong>When you start off in Cairo, you essentially have a back-up. In our case, we had to do everything in Sahel,\u201d Mohamed tells us. Over three summers, she has had to jury-rig her own central kitchen and train a staff to work around equipment failures promoted by a still-unstable electricity grid. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Finding the right staff \u2014 and housing for said staff \u2014 is also a hurdle<\/strong>, and a costly one at that, Mohamed tells us. Salaries and accommodation for staff come at a hefty price tag, and transportation as well. Is it all worth it? <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>\u201cThere\u2019s a sort of spiral of silence around Sahel, and I want to break that,\u201d <\/strong>says <a target=\"_blank\" href=\"https:\/\/www.instagram.com\/peri.fooding\/?hl=en\" style=\"\" rel=\"noopener\">Perihan<\/a><a target=\"_blank\" href=\"https:\/\/www.instagram.com\/peri.fooding\/?hl=en\" style=\"\" rel=\"noopener\">Saleh<\/a>, chef at <a target=\"_blank\" href=\"https:\/\/www.instagram.com\/graciaseg\/?hl=en\" style=\"\" rel=\"noopener\">Gracias<\/a>. Saleh notes that there\u2019s a pressure to hide losses from the masses \u2014 and they are substantial, she says. Saleh shared Mohamed\u2019s qualms about staffing and rent, but she\u2019s also concerned about a thinning out of her target market. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>The sprawl of Sahel is a double-edged sword, Saleh says: <\/strong>Until around 2022, Sahel's prime F&amp;B zone was a concentrated 40-kilometer stretch, roughly from Hacienda to Ghazala, she says. This meant that despite operational costs being significantly higher, the high concentration of visitors and fewer competitors made it a worthwhile investment. The outward expansion of Sahel has diluted her target market at the same time as more competition has driven up rentals costs. Transportation expenses, meanwhile, have crept up as fuel subsidies have been lifted and distances get longer.<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>When Saleh did call Sahel home, she operated through her own central kitchen<\/strong>. That came with its own set of problems \u2014 problems that Mohamed now faces. \u201cThere\u2019s no provider\" for a central kitchen in Sahel, she notes. Food transport is a challenge (refrigerated trucks are difficult to come by) and the costs of transportation add up quickly. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Then there\u2019s rent: A massive contributor to the costs of any F&amp;B outlet<\/strong>, where operators need to navigate unreasonable landlords and the pressure to stay on the coastal side of the highway. Rents are cheaper on the desert side, but electricity is even more unreliable there, contributing to a higher volume of equipment failures. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Even big players find it challenging. <\/strong>\u201cWe face a lot of challenges in terms of staffing and recruiting. The problem is that everything changes year to year, and you find yourself having to revisit your infrastructure,\u201d Lina Gaballa, brand manager at <a target=\"_blank\" href=\"https:\/\/tltconcepts.com\/\" style=\"\" rel=\"noopener\">TLT Concepts<\/a>, tells us. TLT operates brands including The Lemon Tree, Rituals of Zoya, Gouna\u2019s Villa Coconut, and a line of hotels.<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Who pays the price for these hiccups? The customer. <\/strong>\u201cBefore jumping into the Sahel F&amp;B scene, I always thought everything was <a target=\"_blank\" href=\"https:\/\/enterprise.news\/destination-sahel\/en\/news\/story\/08d1c502-febe-4399-ac10-35cc78abd621\/is-sahel-really-overpriced%3F\" style=\"\" rel=\"noopener\">overpriced<\/a>. I soon realized it was justified,\u201d Mohamed tells us. \u201cIt\u2019s how you end up with an EGP 600 burger,\u201d Saleh adds. Even then, you don\u2019t know if you\u2019ll even break even. If you\u2019re keeping up with the subtle changes, however, you might have better luck. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Bottom line: <\/strong>While Sahel may not be the place where F&amp;B brands initially make the most money, it\u2019s a launchpad \u2014 a place in which to make a name for themselves and then expand to the capital city and beyond. After all: They have a captive audience with the country\u2019s highest purchasing power who are largely in vacation mode for two months and willing to splurge a little. <\/p>\n<p class=\"tag-border-left\">HOW THE F&amp;B MARKET IS CHANGING UP NORTH-<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>The North Coast is transitioning beyond its role as a seasonal, casual dining hub.<\/strong> A lot factors into this push, including a rise in demand for elevated culinary offerings, the inflow of Arab tourists, and a growing emphasis by developers on representing brands that go beyond just food \u2014 witness SODIC\u2019s plans to <a target=\"_blank\" href=\"https:\/\/enterprise.news\/egypt\/en\/news\/story\/e53623b5-cdad-4f3f-8268-59ff3f5218fb\/sodic-to-invest-over-egp-10-bn-in-hospitality,-expand-with-marriott-and-nobu-hotels\" style=\"\" rel=\"noopener\">launch<\/a> a Marriott Tribute Portfolio hotel as well as a hotel and residences under the Nobu brand, both in Ras Al Hekma. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>\u201cWe\u2019ve seen a huge influx of regional tourists. The industry and the market have changed dramatically in the last couple of years,\u201d<\/strong> <a target=\"_blank\" href=\"https:\/\/www.instagram.com\/thesmokerybeach\/?hl=en\" style=\"\" rel=\"noopener\">The Smokery<\/a> Group Chief Marketing Officer Alexandra Henein tells us. \u201cWe always thought the North Coast was a very local, Egyptian thing, but now in June, most of our clients are actually foreigners. You have a lot of people that come from the GCC countries,\u201d she adds. Those visitors, she notes, need no introduction to San Carlo, the <a target=\"_blank\" href=\"https:\/\/www.instagram.com\/sancarlo.eg\/?hl=en\" style=\"\" rel=\"noopener\">international franchise<\/a> Smokery has brought to Sahel. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>\u201cLast year, an influx in tourists [from the Gulf] led to us stay open for longer.<\/strong> We see this happening this year as well,\u201d TLT Concepts\u2019 Gaballa says. Gulf visitors are also influencing what\u2019s on the menu, she says: \u201cAt <a target=\"_blank\" href=\"https:\/\/www.instagram.com\/theoriginsbytlt\/?hl=en\" style=\"\" rel=\"noopener\">The Origins of Le Sidi<\/a>, we introduced more [Egyptian] breakfast for the GCC community.\u201d<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>It\u2019s no longer enough to serve good food.<\/strong> It\u2019s about experiences, too, Henein notes: \u201cYou have huge acts and International DJs coming to Sahel this summer. So I really think we\u2019ve seen a big evolution in entertainment and in cuisine.\u201d To make it big in Sahel, you need to bring the big names in. And it\u2019s not just about nightlife anymore. \u201cPeople are leaning more and more towards morning events. We\u2019ve seen that shift in behavior,\u201d Gaballa explains. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Developers<\/strong><strong> know this, and they\u2019re actively on the hunt for high-end F&amp;B experiences to <\/strong><strong>integrate into their projects<\/strong>. Misr Italia Properties, for example, is <a target=\"_blank\" href=\"https:\/\/www.facebook.com\/reel\/1053549872870752\" style=\"\" rel=\"noopener\">introducing Eatery<\/a> \u2014 an already-established and beloved brand \u2014 to Solare Beach Ras Al Hekma this season. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Misr Italia is playing to an ongoing shift in consumer behavior and the gravitational pull <\/strong><strong>towards familiar names.<\/strong> \u201cWe're seeing everything from young families looking for quality time and meaningful experiences by the sea to trend-savvy urbanites seeking well-curated dining and entertainment options,\u201d a company exec told us.<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>Competition is making it harder to stand out: <\/strong>\"Everyone who opened until 2022 made it big \u2014 after that the competition got too fierce. To make it big [now], you have to offer something cool,\u201d Saleh says.<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>At <\/strong><strong><a target=\"_blank\" href=\"https:\/\/www.instagram.com\/p\/DLxk90WNk6I\/?hl=en\" style=\"\" rel=\"noopener\">Ramla by Marakez<\/a><\/strong><strong>, for example, a slightly different approach has been taken when it <\/strong><strong>comes to <\/strong><strong>high-end F&amp;B experiences. <\/strong>Instead of going after international brands, they are putting together a curated local lineup of Egyptian cultural icons like Azza Fahmy and Mounir Neamatalla to develop concepts for a <strong>Azza Fahmy Beach Clubhouse<\/strong> and an ecolodge based on Neamatalla\u2019s philosophy for the famous Siwa landmark <strong>Adr\u00e8re Amellal<\/strong> set to open in 2028. This summer they are also partnering with When We Eat to bring in international, award-winning chefs for a series of fine dining experiences on the beach. <\/p>\n<p class=\"tag-border-left\">A YEAR LONG AFFAIR?<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>One thing that would make operating in Sahel easier? For it to become a year-round <\/strong><strong>destination<\/strong>, says TLT Concepts\u2019 Chef Mirette Aly believes. Aly notes that operating all year long would give F&amp;B outlets the opportunity to spread costs out. It would also see more connective tissue built between the various players in the industry. \u201cWe do see this [eventually] happening with the amount of investments and all the infrastructure being built around Alamein and the coastline in general,\u201d Gaballa says. <\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>\"I don't think [a year-long presence in Sahel] is possible. Maybe in the future,\u201d <\/strong>Henein says. \u201cFor the time being, I do not think it\u2019s possible due to culture, weather conditions, infrastructure and not enough international tourism yet.\u201d she adds. May, September, and October are slow months for food businesses. Don\u2019t even think about the winter months.<\/p>\n<p style=\"padding:0;margin:0;line-height:1.15;orphans:2;widows:2;text-align:left\"><strong>What if \u2014 like El Gouna \u2014 Sahel had its year-round community? <\/strong>What changes would have to be made to support F&amp;B businesses across the coast? Proper infrastructure, including better roads, specialized logistics providers (think: refrigerated transportation), and a stable electricity grid.
