? <\/strong>Il Forno is redefining what pizza can be in Cairo. <\/strong>What immediately sets Il<\/a>Forno<\/a> apart is their commitment to doing a few things exceptionally well rather than offering an endless menu of mediocre options. Their selection isn\u2019t a limitation \u2014 it\u2019s intentional. Every pizza on the menu feels purposeful, curated by someone who genuinely loves pizza and understands flavor.<\/p>\n

The ingredients speak for themselves.<\/strong> You can taste the difference in every bite of this Italian-style pizza, which suddenly stops feeling like junk food and starts feeling like a genuine culinary experience. Of the pizzas we tried, the Four, the Black, and the Evergreen broke through the roster of an already exceptional variety. <\/p>\n

The Four is a bold cheese lover\u2019s dream<\/strong>, featuring brie and goat cheese alongside the expected mozzarella and parmigiano reggiano you might find at other quality establishments. It\u2019s rich without being heavy, and the brie adds an unexpected twist on a combination we already love.<\/p>\n

The truffle comes in two ways on the Black. <\/strong>Truffle oil and paste are indulgently flavorful and surprisingly not too overwhelming on the palate \u2014 a common pitfall with truffle pizzas. Combined with white mushroom cream and saut\u00e9ed mushrooms, it\u2019s earthy, sophisticated, and perfectly balanced.<\/p>\n

The Evergreen tastes exactly like its name suggests \u2014 it\u2019s bright, fresh, and vibrant.<\/strong> The basil pesto base with stracciatella and sundried tomatoes creates a pizza that feels lighter and more refreshing than your typical pie.<\/p>\n

The crust alone is worth the visit <\/strong>\u2014 expertly made dough with just the right amount of char to give it that earthy, wood-fired taste without any bitterness. It\u2019s chewy in all the right ways: substantial but not exhausting to eat.<\/p>\n

Every weekend, Il Forno introduces the Drop \u2014 a limited-quantity specialty pizza <\/strong>that\u2019s only available while supplies last. <\/strong>It\u2019s a clever way to keep the menu exciting and showcase seasonal ingredients or experimental flavor combinations.<\/p>\n

Il Forno operates out of a small kitchen, with limited seating in front.<\/strong> The seats aren\u2019t the most comfortable, but after a taste, you\u2019ll happily perch anywhere just to dive into the pizza immediately. The staff is friendly and welcoming, and the wait time is refreshingly short considering each pizza is made fresh to order.<\/p>\n

The reality check: <\/strong>Il Forno\u2019s one fault is that they don\u2019t deliver. And while we understand why \u2014 they take the freshness of the pizza very seriously, as anyone who cares about their craft would \u2014 it pains us that we can\u2019t welcome it to our doorstep. That is, unless they\u2019re catering your event, which they will happily do.<\/p>\n
